先說,富田師傅還是很有活力,很會跟客人聊天(笑)
這三年最大的變化,就是富田沾麵有線上預約了。

「Omakase」這個餐廳預約網站,每週二的中午開始下週的預約(週三定休,週四~週二)
線上需要登錄信用卡,預約手續費390jpy會自動扣款。

費用當天到現場去用發券機(現金)。主食(沾麵/拉麵)跟份量在線上預約時就要決定。
發券機是「店員指示客人預約了什麼請按哪一個」,不是自己過去就可以按的,
配菜或是飯類可以當天到場再決定就好。
店頭早上發券也還在,每天早上八點鐘發券。不過我這四次都用線上預約了。
但這個預約的取消處罰很重,每人以2000日幣計算(不管點什麼),
兩天前取消50%,前一天或當天才取消100%全額。
所以我都是到日本才預約,平日還算是都會有空,頂多時段不太好,也會有人取消。

這次是昨天中午用羽田落地後,飛機還在滑行我已經在預約沾麵了,約到下午13:50。

這兩個月吃了四次,可以有信心的說,味道跟三年前比,很明顯不太一樣了。
首先是,麵沒有那麼「暴力」了。

現在的麵,沒有那麼彈牙那麼有嚼勁,吃起來更容易入口,但也少了點特色。
而沾汁的部份也不太一樣。

2019以前還有點「拉麵」的樣子,擺了海苔跟魚板。

談到「拉麵是什麼?」的時候就會認為叉燒/筍乾/魚板/海苔是標配。
2022的沾汁更純粹了,雖然裡面還有很燙很燙的筍乾就是了。
(吃的時候請注意,真的很燙)
沾麵(冷)與沾汁(燙)的溫度差也是沾麵的賣點。
在吃的時候,試著不要「整條麵」都泡進湯汁裡面,頂多一半,然後吸到嘴巴裡。
一開始吃進嘴裡的麵是沒有沾到的,不要緊,這時候不要咀嚼,
等底下沾到的部份也進到嘴裡,再開始咀嚼,然後「兩種」麵就會在嘴巴裡混合。
沾了熱燙沾汁的麵是主菜,很香很夠味,熱熱的很好吃,
而在同時,冷冷的沒沾到的麵也會沖淡沾汁的強烈味道,清涼的效果像是緩衝。
這樣就可以一口接一口的無限循環,非常過癮。
現在還加上了另一種變化,吃一半的時候,店員會拿電動研磨器出來,
裡面是「山椒」,按頂部的按鈕就會磨出山椒粉,加在麵上又別有一番滋味。
(不會辣,也是比較像「清涼劑」的作用)
吃完麵沾汁應該會有剩,記得要「收尾高湯」(スープ割り)。

店員會確認「可以放柚子嗎?」,這個調味可以讓收尾更清爽,但也有人不喜歡柚子味。
最後煮得熱騰騰的收尾高湯倒進去,喝下去身體暖洋洋的,幸福。

那個燒賣我實在不行(日本燒賣不太對我口味),第二次就換成味玉了。

叉燒的部份,很好吃,但跟沾麵本身沒有「相輔相成」的感覺。

這一碗,超級好吃!!!!
跟富田師傅講我第一次點飯類沒想到這麼好吃。
他老兄興奮到比手畫腳跟我解釋這碗的設計精神。
「從上面看只看到蛋黃,其實蛋白部份在叉燒跟白飯中間」
「所以這也是一碗生蛋拌飯,但是用叉燒的醬汁與油脂代替醬油」
「這樣子層層交疊,讓味道更加美味」(邊講邊做出交疊的手勢)
個人推薦的點餐法:
沾麵(並)1300+極上叉燒飯650=1950jpy
不習慣「碳水+碳水」又吃麵又吃飯的話,可以點沾麵(並)+味玉200這樣1500jpy。
想嘗試各種叉燒的再點1000jpy的全配就好。
注意:
對自己食量有自信再點大盛,真的很多,我差點吃不完(沒配飯,光麵就吃撐了)。
